A healthy full English breakfast


When staying at a hotel in the UK, my favourite meal is the breakfast, when I always order a full English. Inspired by this feast, I’ve started making my own paleo approved full English breakfast that’s just yummy and keeps you full for hours! And it’s actually healthy, as opposed to the regular full English, which can be quite calorific.

Ingredients – 1 person
3-4 eggs, depending on how hungry you are
1 avocado
1 tomato
2 mushrooms
Lemon juice
Salt + pepper
Coconut oil or other cooking oil

Start by slicing the mushrooms and halving the tomatoes. When it comes to cutting an avocado, I prefer to slice it in two, remove the pit by hitting it hard with the knife so it attaches and pull it out. I then use the knife to cut three lines lengthways and 4-5 sideways, careful not to cut through the skin. Finally, I use a teaspoon to spoon the avocado flesh into a bowl. Some people wring the avocado skin instead of using a spoon, but I always make a mess of that…

Once the veggies are chopped, start by frying the tomatoes and the mushrooms in a tablespoon of coconut oil, with a sprinkling of salt and pepper. Fry them in the same pan, as the juice from the tomato will give a yummy taste to the mushrooms. They are done when the mushrooms are cooked through and the tomatoes are all soggy.

Place the chopped avocado in a bowl and add salt, pepper, a good squirt of lemon juice and some coriander. Mash with a fork until mushy and yummy!

You probably know well how to make scrambled eggs, but just to be sure: Crack the eggs into a glass, add salt and pepper, and whisk with a fork until well blended. Melt some coconut oil in a telfon pan (telfon makes cleaning off the eggs so much easier!) and once the oil is hot, add the egg mixture. Chop some chives on top, if you have available (I grow mine on my balcony). Stir frequently while the eggs set, and take them just before they seem cooked, as they continue to cook for a little while after they are removed from the heat.
