Delicious crab sandwiches

 


I love seafood and in particular shellfish, so when crabs are in season, I go all in and have it several times a week. While I made crab salad the other week, this time delicious crab rolls are on the menu.

Ingredients – 2 persons

 
Lettuce/tomato

Two rolls/four slices of bread/two small baguettes
2-3 large leaves of lettuce
4-6 thin slices of tomato
Lemon juice
1/4 red onion, finely chopped
Salt + pepper
3 tbs mayonnaise
2 tbs chopped coriander/cilantro
The meat of one crab

Slice the rolls/baguettes in two and layer on lettuce and tomato slices on each slice.

 

Blend together the crab meat with the remaining ingredients and add salt, pepper and lemon juice to taste.

 
Pile the filling on top of each slice and enjoy!
 
PS: Please note that I only made two sandwiches out of my one crab, which explains the huge pile of meat on top of each roll. There can be too much of a good thing, though, so I recommend dividing the amount between four sandwiches!
 
 

Avocado
Two rolls/four slices of bread/two small baguettes
1 sliced avocado
Lemon juice
Salt + pepper
3 tbs mayonnaise
2 tbs chopped coriander/cilantro
1/4 red onion, finely chopped
The meat of one crab

Slice the rolls/baguettes in two. Blend the crab meat with all ingredients but the avocado and add salt, pepper and lemon juice to taste. 

Divide the crab mixture between the four slices, and place sliced avocado on top.
