I came up with this recipe as I was forced to use my spinach before it walked out of the fridge on its own. While I love my spinach, sometimes I forget that it — along with ruccola/rocket — needs to be eaten within a few days of buying, otherwise it will just wilt and die a wasteful death.
Basically, this recipe consists of all the ingredients that I really like and they taste just yummy when they are all combined on the plate. I suggest that you serve the spinach with grilled or fried meat or fish — it would taste wonderfully with grilled salmon or cod, while I enjoyed it with a fried chicken breast. Enjoy!
Ingredients — serves two people as a side dish:
1/2 medium onion, finely chopped
2 garlic cloves, crushed or finely chopped
2 mushrooms, sliced thinly
1 bag of spinach (approx 200 grams)
Lots of salt and pepper
1 tbsp dried or 1,5 tbsp freshly chopped parsley
2 tbsp chopped cilantro/coriander
A large squeeze of lime or lemon
Fry the onion and garlic in coconut oil in a frying pan. When translucent, add the mushrooms and fry until brown. Then add the spinach and fry until it’s wilted. Add the seasoning, mix well and serve immediately with your meat or fish of choice.
