Avocado is my favourite vegetable and as a paleo eater, it frequently features in my breakfasts and as an important salad ingredient. I have scoured the web to find tips on how to store, cook with and cherish my beloved green vegetable:

{1} How to store avocados Just remember to eat them once they are ripe — and take them out of the fridge a day or two before cooking the meal. I frequently forget both…

{2} How to tell if the avocado is ripe This trick normally works with the avocados that I buy in Norway, in addition to squeezing them carefully in my hand, careful not to bruise them.

{3} Avocado on toast redesigned — This recipe shows you how to make avocado on toast, with an egg inserted. Cool and incredibly easy!

{4} Shrimp and avocado salad — This is a variation of my favourite salad that I first tasted in Antibes. Avocado and shrimp go so well together, they seem to bring out the best in each other’s flavours. Tiger prawns taste even better!

{5} And finally, some more unusual avocado recipes — These five recipes range from avocado soup and deviled eggs to avocado fries. I for one am trying my hands at the deviled eggs, as they look delish!

      Haha, that’s how I feel about them as well. And mangos. I looove mangos and avocados, possibly more than chocolate. Btw I made this avocado and cocoa dessert once that tasted very similar to chocolate mousse, but not quite… To be honest, avocados taste better et naturel, with a squirt of lemon and some seasoning. 😉 xoxo Anett
